2 oranges 3 tbs sunflower oil 100g Shiitake mushrooms – stalks trimmed 150g Chestnut mushrooms 150g Oyster mushrooms 2 tbs sesame seeds 100g baby spinach leaves

Method Peel and segment one orange. Heat oil in a large frying pan, add shiitake and chestnut mushrooms and cook for 3 minutes. Add oyster mushrooms, cover and cook for a further 2 minutes. Add sesame seeds and grated rind and juice of remaining orange. Stir in the orange segments and spinach. Heat through, serve immediately. Serves 4
