Ginger would have to be one of the most versatile ingredients. Fresh ginger is available easily and there are some wonderful processed ginger products being produced. Buderim Ginger seems to have covered all bases, producing marmalades, sauces, pickled ginger, crushed and grated ginger, ginger in syrup etc.
There is also a variety of unusual tubers available on the Sunshine Coast, although most growers are growing them specifically as additions to their own specialised curry pastes and preserves. A few of them do supply to restauraunts of have mail order facilities for the more unusual varieties.
